My recommended coffee stop stop for Chiang Dao (& I've tried a few.)

A nice open air cafe / pub.
Perfectly located beside the road. Stop your bike, get of & take a few steps & you're inside. Too easy.

the bamboo bridge over the rice fields seems to be a big fashion now after the Su Tong Pae one in MHS.

Location: 2.7 ms south of the Chiang Dao bypass at the south end of Chiang Dao. On the west side. Follow the signs for the Buraphat Resort & it is 650 metres off R107 & 400 metres before the Buraphat. And if you like some nice accommodation with a pool, check out the Buraphat.

Some of my favourites in CDAO:

Evening with life music, "The Cojon" our top place, biggest plus they have Beer Lao dark & Lager after me being a pita for some months, go there after 19:00, outside and roofed seating, just behind Lotus's:

On the same compound "360 Moong Mom Bar", food is much less than at The Cojon:

There are some more places there like "Walksky" "Pathom 6" and some buffet style Moo Gratha places.

If you are in for Congee (Khao tom) "Noi's" is your place:

Or the "Nang Len Nang Lao":

Nang Len Nang Lao is also opened during daytime.

For lunch:

But quality wise the best one near Busstation CDAO:

Outside of town day and evening just opposite army compound the Moo Hao:

Steaks/Swiss my personal favourite, on the same compound as The Wes Village Resort:

I am not posting anything about places near Chiang Dao Cave as much more catering "Farang Kheenok" :p so I hardly go there, just passing through on my way to Mueang Khong....................... some other places for farang food or craft beer I do not recommend as very negative experiences, be warned...... but then being only 80 kms from the moat in CNX one doesn't really need farang food here every day.
 
When it's not raining, The COJON has a big open seating area under 2 huge trees and also a big stage outside. On some weekends it is really packed with local 'better off' folks.
